Investigation has demonstrated that the Mediterranean crop of olives cannot be ripened and shipped as ours is. This gives to California practically a monopoly on the ripe olive industry, a distinction not shared by any other crop grown in this State. We know there is a vast market to consume the ripe olive, yet it is an abstract market because the consumer knows little or nothing of it and its high food value. We well know how eager the stranger is to obtain a supply after his Introduction to them. It is a market which requires publicity and education, both so efficient and broad in their scope that no grower or packer could have any marked effect on it. Concerted action alone along these lines by growers or packers, or both, will accomplish it. We may assume that there are about 16,000 acres of bearing trees in this State, with the same acreage planted to young non-bearing trees. The pack of ripe olives last year was about 4,000 tons and the imports of green olives from Spain were substantially this same quantity, perhaps a trifle more. Using these figures as a basis, and considering the way our citrus crop has been handled and sold, even with its very rapidly expanding yield year by year, it seems most reasonable to assume that given the same efficient publicity and development, the market of the United States alone will consume all the ripe olives of proper pickling size and standardized as to package, which this State may grow for many years to come.
