U. S. Choice grade beef accounts for about half of our total supply of block beef, and it is the only quality of beef for which adequate statistical data are available for a study of this type. It is believed that this analysis gives a broadly representative picture of margins and costs of marketing for most qualities of beef sold in fresh form.
