However, the conditions under which the informal sector operates raise concerns relating to the safety and quality of food sold. This chapter makes reference to case studies conducted by the International Livestock Research Institute,Äôs Safe Food Fair Food project to facilitate the implementation of food safety in Sub-Saharan Africa. The purpose is to illustrate the relevance and applicability of a food chain approach in the implementation of food safety in the informal sector. Results show that some milk gets contaminated during milking, processing, cooling and handling. Such practices as adulteration and pooling were also reported to contaminate milk. The chapter concludes that it is the responsibility of all stakeholders to ensure the safety of milk along the chain.
